Detroit Dark Red Beets
Beta vulgaris
This root crop is deep red in color, with super sweet juicy yet firm flesh. The seeds will need to be directly seeded into the garden. They grow to be about 3" in diameter at harvest. The leaves can also be harvested and cooked as greens. Beets contain significant amounts of vitamin C, iron, magnesium, dietary fiber, folate, potassium and manganese. They can be eaten raw in a salad, roasted, boiled, used in soups, and even pickled. For some inspiration, check out some of these creative ways to use your beets.
