Our herb selection is intentionally curated—not every type of dill, oregano, or thyme, but trusted varieties we’ve grown, tested, and know work in Florida and other hot, humid regions. Some herbs, like cilantro, behave like annuals. Fun fact: even though cilantro is quick to bolt, once those flowers turn to seeds, crushed up, they are the spice coriander. Others are perennial or semi-perennial, depending on your climate. Understanding how long an herb typically lasts, and how it responds to seasonal shifts, can help you get the most out of each plant. In some cases, it’s worth potting up and moving herbs like Texas tarragon to protect them from seasonal extremes. A single plant, cared for this way, can thrive for years.
