Lunar White Carrots
Daucus Carota var. Sativus

The Lunar White carrot is an open pollinated variety that will reach full maturity in 65-70 days. This variety has been grown since the early 1600's and was originally fed to cattle in Europe. It will produce high yields of moon white carrots that are 6 to 8 in. long and nearly coreless. They have a mild, sweeter taste than the average orange carrot. Because this is not a very common carrot, we have included a yummy recipe below

White Carrot Soup

Ingredients: 6 medium to large Lunar White Carrots diced, 2 leeks sliced, 1 celery stick sliced, pinch of dry thyme, 1/2 clove garlic minced, 750 ml chicken stock, salt and pepper to taste, 1 tbsp honey, 1 tbsp heavy cream

Directions:
  • Begin by sweating the vegetables in a little olive oil for 5 minutes before pouring in all of the chicken stock and adding the thyme.
  • Simmer for 20 minutes until all of the vegetables are soft then put in a blender until smooth
  • Return to pot and add honey and heavy cream, stir well

 

If the soup is too thick thin with water until desired consistency is reached. Add cheese if you would like
