Pak Choi-White Stem Choi

Brassica rapa

This widely grown Asian green, also called bok choy, has smooth green leaves and thick white leaf stalks. It is one of the most popular Asian vegetables and a main ingredient in chow mein and stir-fries.

Our favorite way to plant pak choi-
-when soil temperature is in the 60's, for each row, draw a line in the soil with your finger, 1/2 to 3/4 inches deep, the entire length of the row. Sprinkle in the seeds so they fall about 1/2 to 2 inches apart. Then cover and pat the soil. As the sprouts grow, harvest out entire baby plants, so that none are crowding eachother. It will be approximately every other plant per week until you achieve proper plant spacing of 9-12 inches apart. At that time, let them grow into their full pak choi heads. This way, you get to eat baby pak choi almost the entire time the plants are growing, instead of waiting for individual plants to get there full size.
