Flowering Brassica-Yu Choi Sum

Yu choy is a leafy vegetable with tender fleshy stalks that grow 20-30 cm tall. It has an elongated oval shape with lightly serrated edges, and its greens vary from light to dark green. Green buds form the base of the small yellow flowers, which occur in densely compacted clusters of 10-20. Flowers of yu choi sum can be removed and eaten raw or combined into salads, but most people leave them on the stem to eat with their meal. Flowers of yu choy are often found intact among the tender green stalks and leafy greens of the plant.
