Burgundy Bush
Phaseolus vulgaris
Royal Burgundy Bush Beans are a lovely violet purple color on the outside and green on the inside. When cooked, the beans will turn green. Harvest when the beans still snap easily, before the seeds inside visibly bulge, and harvest often to encourage more production. If you wait until seeds are already bulging, just eat the beans inside instead of the whole pod, or dry to save the seeds! Bush beans will grow to be about 1-2 feet tall.
