Egg Plant-Mizuno Takumi Japanese

Solanum melongena

It’s a shiny purplish fruit well known for its fleshy and tender skin. Most people enjoy it by cooking or pickling. Commonly found in Japan as we can see from its name. It’s a good source of dietary fibers and helps in indigestion, rich in vitamin C and minerals like potassium, manganese and folate. These really love our Summers here in Tampa.  Although much smaller (1/2lb), these make a great heat tolerant replacement for the classic black beauty. If you want eggplants throughout the summer, and eggplant parmesan is your favorite eggplant dish, this is the one for you
