White Leaf Amaranth
Amaranthus mangostanus
A light green colored leafy green. Very high in iron and calcium. The leaves are tender and a bit smaller than other Amaranth varieties. It is popularly used in Japanese and Taiwanese stir fries. Also grown as a summer crop in Central FL.

Harvest tips | Harvest amaranth leaves as needed. The younger leaves are better raw and the older leaves are better cooked due to oxalates. Tip the plant for a more bushy plant. Seeds are eaten as a healthy grain. |
