A light green colored leafy green. Very high in iron and calcium. The leaves are tender and a bit smaller than other Amaranth varieties. It is popularly used in Japanese and Taiwanese stir fries. Also grown as a summer crop in Central FL.

Harvest tips
Harvest amaranth leaves as needed. The younger leaves are better raw and the older leaves are better cooked due to oxalates. Tip the plant for a more bushy plant. Seeds are eaten as a healthy grain.
